80g pack Suimin Hot & Spicy 2 minute Ramen noodles
1 teaspoon tom yum paste
¼ cup coconut milk
½ teaspoon fish sauce
100g peeled green prawns
6 cherry tomatoes, halved
2 button mushrooms, sliced
⅓ cup bean sprouts
Sprig of mint
Sprigs of coriander
Juice of ½ lime
Method
In a medium saucepan combine 500ml water, tom yum paste, coconut milk, fish sauce and hot & spicy seasoning together over a medium heat, bring to the boil. Reduce heat to a simmer.
Add prawns and mushrooms, cover and poach for 2 minutes or until cooked through. Remove and set aside until required.
Add noodles and cook following pack instructions.
Place cooked noodles in a serving bowl topped with cooked prawns, cherry tomatoes, button mushrooms, bean sprouts, mint and coriander. Pour over the hot and spicy broth and serve with a squeeze of lime.
